Standing fermentation

The single AOC sweet rosé wine in the world. After a very short skin contact (20%) and direct pressing (80%), the fermentation start at low temperature, we stop the fermentation with a tangential filter to keep some sugar and give a sweet test.
A beautiful crimson tint gives at the Cabernet d’Anjou a beautiful and lightly colour with an aromatic bouquet; you can smell raspberry, spicy flavours and red berries taste. The balance with the sweetness and the freshness is very well made. One of the biggest AOC in France.
You better consume these wine young (fresh and fruity). You can keep it 2 or 3 years, and serve it at 8-10°C.
Cabernet d’Anjou is good in apéritif, then excellent with poultry cook in sauce, Japanese foods, and spicy food. Succulent as well with your pastry making (fruit tart or any cake).
