Standing fermentation

The vineyards of the Coteaux du Layon is located on the south eastern Armorican Massif constituted mainly of shale. This gives brown soils moderately deep dark color. The situation of the hills well exposed and ventilated with the presence of morning mist rising from the Layon, constituting getting overmatured grapes and the emergence of the “noble rot”. The only grape is Chenin Blanc, or “Pineau de Loire”.

Vinification
We select fruit maturation of grapes, with noble rot, botrytized. Then extracted tannins by a progressive pressing, then finished by a long cold fermentation. Maturation: small unit.

Characters
Sweet white wine, is colour are rather clear in the early years and become gold. The nose gives off a fruity bouquet original yellow fruit (apricot). In the mouth the Coteaux du Layon is long and perfumed and elegant but also nervous. Serve cool, not hit, it is delicious as an aperitif and surprising an accompany foie gras or a fish in a butter sauce. It can be kept but drunk young it is more sweet fruity than mellow.
